Roasted Red Pepper Hummus



2 cups of cooked chickpeas 

1 tbsp lemon juice 

1 tbsp tahini 

1 medium roasted red pepper (about 1/2 cup)

2 cloves minced garlic 

1/2 teaspoon cumin

1/2 teaspoon paprika

1/2 teaspoon salt or more to taste

1/2 teaspoon cayenne pepper (optional for spice) 


1. Add  the tahini, lemon juice, and 1 tablespoon of water into a blender or food processor and pulse to combine.

2. Next add in the chickpeas, roasted red pepper, garlic, cumin, smoked paprika, salt and cayenne pepper (if desired). Add in a small amount of water (about 1tbsp at a time) to help blend the ingredients until smooth. 

3. Transfer the hummus in a shallow dish or bowl and serve with pita bread, pita chips or raw vegetables. Hummus can be refrigerated in an air-tight container for up to 1 week.
