Mixed Berry Smoothie Pops

Ingredients

Popsicles:

  • 1 cup vanilla Greek yogurt

  • Splash of vanilla almond milk (or milk of choice) 

  • 1 cup blackberries fresh or frozen

  • 1 cup blueberries fresh or frozen

  • 1 banana

Chocolate Shell Coating (optional):

  • 1 cup dark chocolate 

  • 1 tsp coconut oil

  • Unsweetened coconut flakes to sprinkle on top

Directions

1. Place the blackberries, blueberries, banana and almond milk in a high speed blender or food processor and blend until smooth. 

 

2. Pour the mixture into a large bowl and add in the yogurt. If you want the popsicles to have a swirl effect as pictured, do not fully blend the yogurt with the mixture. You want to see white and blue patches in the mixture. 

 

3.  Transfer this mixture into popsicle molds, insert popsicles sticks, and freeze until solid. Approximately 6-8hrs. 

Chocolate Shell Coating (optional):

1. Place the dark chocolate in a glass bowl over a pot of simmering water. Stir occasionally until melted and smooth. 

2. Place wax paper onto a baking sheet and set aside. 

3. Remove from heat and allow the chocolate to cool slightly. Do not allow the chocolate to cool for too long or it will solidify again. 

4. Take your popsicle mold out of the freezer and run under hot water for a few seconds until the popsicle slides out easily. Dip each popsicle into the chocolate and lay flat onto your baking sheet.

5. Sprinkle with coconut flakes and place in the freezer for a few minutes until the chocolate coating solidifies.
