budget friendly Mediterranean Pasta
Ingredients
3 cups Whole grain rotini pasta, dry
2 cans of light tuna (packed in water),
drained
1 tomato chopped (about 1 cup)
1/4 cup pitted, kalamata olives (chopped)
1/4 cup chopped red onion
2 Tbsp chopped parsley
1 Tbsp capers
2 teaspoons lemon juice
2 Tbsp extra virgin olive oil
1/2 teaspoon kosher salt
Pinch of freshly ground black pepper
Crumbled feta or mozzarella cheese for topping
Directions
1. Begin by adding water into a medium sized pot on high heat. When the water comes to a boil, add the pasta and allow to cook until al dente (cooked through, but still a little firm to the bite).

2. Remove tuna from the can, drain and place in a medium sized bowl. To this, add the chopped tomato, olives, onion, parsley, capers, lemon juice, olive oil, salt, pepper. Stir with a fork to break up the tuna and mix until ingredients are combined.

3. Strain your pasta and then add in your tuna mixture. Mix well to combine and serve with crumbled feta or mozzarella cheese. Enjoy!
