Everyone loves a good cafe pumpkin spice latte…except maybe the all that added sugar. Many of these coffee shop lattes contain added sugars and processed ingredients that may not be the best for your brain, gut, or body. Today I’d like to share my spin on the Pumpkin Spice Latte:
⁃ 1 cup oat milk (or other milk of choice); oat milk will add extra creaminess to the drink
⁃ 3 tablespoons pumpkin puree (you can used canned pure pumpkin or make it home-made by baking or simmering the pumpkin and putting it in a food processor once soft)
⁃ 1/2 teaspoon vanilla
⁃ 1-2 teaspoons raw honey (orstevia drops)
⁃ 1/2 teaspoon pumpkin spice - store bought or homemade by combining:
⁃ Ground cinnamon
⁃ Ground ginger
⁃ Ground cloves
⁃ Ground nutmeg
⁃ Ground turmeric
- optional: marshmallows and dark chocolate for topping
Step 1. In a saucepan, mix together milk of choice and pumpkin puree and cook on medium heat.
Step 2. Remove from heat, stir in vanilla, spices and sweetener. Then, place in a cup and use a frother to foam the milk. You can also use a blender — just process for 30 seconds or until foamy!
Step 3. Top with marshmallows and melted dark chocolate if desired and/or sprinkle with cinnamon and enjoy!
